Barley with fried vegetables and pesto.

Barley is excellent food. On its own, it is tasteless and unexciting, but with good vegetables, spices, pesto and other goodies, it becomes the most delicious. Banking rights can be both a right and a side dish.

Barley with fried vegetables and pesto

1 1/2 cup barley
1/2 red onion
about 5 cm leeks
1/2 dl oil
sun-dried tomatoes + oil
3 garlic cloves
1-2 dl green pesto
1 teaspoon rosemary
chili + salt + pepper

In a saucepan of boiling water, cook barley for 20-25 minutes or until tender, then drain and stand to cool. Chop coarse red onion and leek and fry in oil. Add chopped garlic, sun-dried tomatoes and pesto. Season with rosemary, chilli, salt and pepper. Finally, add the barley barley and about 1/2 dl of the tomato oil.
