I am always fond of raw cakes. They are healthy, delicious, nutritious, and wholesome. Raw cakes are easy to prepare and usually contain natural ingredients like nuts, dates, cocoa, and seeds. They also provide a variety of nutrients, such as vitamins, minerals, and fiber.

Simple Raw Cake with Brazil Nuts

Crust

  • 1 cup Brazil nuts
  • 1 cup almonds
  • 1 cup pitted soft dates
  • 2-3 tablespoons melted coconut oil
  • 1/3 teaspoon salt

Filling

  • 2 cups cashews
  • 1/2 cup coconut milk
  • 1 tablespoon honey
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • Juice of 1 lemon

Crust Preparation:

  1. Place the nuts, almonds, dates, coconut oil, and salt in a food processor.
  2. Blend until the mixture is coarse and sticky.
  3. Press the mixture into the bottom of a cake pan (about 20-23 cm in diameter).

Filling Preparation:

  1. Place the cashews in a blender.
  2. Add the coconut milk, honey, coconut oil, vanilla, and lemon juice to the blender.
  3. Blend until the mixture is smooth and creamy.
  4. Pour the filling over the crust and smooth it out.
  5. Chill well, for at least 4 hours or overnight for even better results.

Serving:

  1. Take the cake out of the fridge 10-15 minutes before serving.
  2. Garnish with chopped Brazil nuts or fresh fruits.
