Mushroom Pâté
Ingredients:
- 3-4 tablespoons olive oil
- 1 cup chopped onion
- 3 cloves garlic
- 1 ½ teaspoons thyme
- 1 ½ teaspoons tarragon
- 1 teaspoon salt
- Pepper
- Cayenne pepper
- 1 box chopped mushrooms (500 g)
- 1 cup lightly toasted walnuts
- 1/2 cup almond butter
- 1 tablespoon balsamic vinegar
- Water to thin, if needed
Instructions:
- Heat olive oil in a large pan over medium heat, add the onions, and sauté for 3-5 minutes until they become translucent.
- Add the garlic and spices and continue to cook for one minute.
- Next, add the sliced mushrooms and sauté for 7-10 minutes, or until they are soft. Reduce the heat if necessary to prevent them from burning.
- While the mushrooms are cooking, place the walnuts in a food processor and grind them finely.
- Add the mushroom mixture to the food processor with the walnuts, along with the balsamic vinegar and almond butter.
- Blend well and add water if needed until the mixture reaches a pâté-like consistency.
