Mushroom Pâté

Ingredients:

  • 3-4 tablespoons olive oil
  • 1 cup chopped onion
  • 3 cloves garlic
  • 1 ½ teaspoons thyme
  • 1 ½ teaspoons tarragon
  • 1 teaspoon salt
  • Pepper
  • Cayenne pepper
  • 1 box chopped mushrooms (500 g)
  • 1 cup lightly toasted walnuts
  • 1/2 cup almond butter
  • 1 tablespoon balsamic vinegar
  • Water to thin, if needed

Instructions:

  1. Heat olive oil in a large pan over medium heat, add the onions, and sauté for 3-5 minutes until they become translucent.
  2. Add the garlic and spices and continue to cook for one minute.
  3. Next, add the sliced mushrooms and sauté for 7-10 minutes, or until they are soft. Reduce the heat if necessary to prevent them from burning.
  4. While the mushrooms are cooking, place the walnuts in a food processor and grind them finely.
  5. Add the mushroom mixture to the food processor with the walnuts, along with the balsamic vinegar and almond butter.
  6. Blend well and add water if needed until the mixture reaches a pâté-like consistency.
