Apricot and Carrot Marmalade

This excellent apricot and carrot marmalade is both delicious and easy to make. The marmalade is perfect for serving with bread, crackers, or as an accompaniment to cheese.

Lemons, Ginger, Apricots, and Carrots

Apricot and Carrot Marmalade

  • 500 g dried apricots
  • 300 g grated carrots
  • 250 g sugar
  • 5 dl water
  • Juice of one lemon
  • 1 tbsp fresh ginger (grated)
  • 1 tbsp lemon zest
  • 1 tsp cinnamon
  • 1 tsp vanilla sugar
  1. Combine all ingredients in a pot and let simmer on low heat for 10-15 minutes.
  2. Blend with an immersion blender or another method until smooth.
  3. Return to the pot, boil for about 5 minutes, and add water if necessary.
  4. Pour the marmalade into clean jars and seal immediately.
  5. The marmalade keeps well in the refrigerator for 2-3 weeks.

Sugar Content:
You can easily reduce the amount of sugar, but keep in mind that sugar helps preserve the marmalade.

Additional Spices:
You can also add a pinch of nutmeg, salt, or cloves to give the marmalade an even deeper flavor.
