Healthy Chocolate Nut Butter

Ingredients:

  • 1 cup almonds
  • 1 cup pecans
  • 1 cup (170g) dark chocolate (the higher the cocoa content, the better)
  • 2 tbsp cocoa powder
  • 1/4 cup pure honey or maple syrup
  • 1/4 cup unsweetened almond milk or other plant-based milk
  • 1 tbsp vanilla extract
  • A pinch of salt

Instructions:

  1. Toast the nuts: Dry roast the nuts in a pan and let them cool slightly.
  2. Grind the nuts: Place the nuts in a food processor or blender and grind them until they turn into a smooth nut butter. This might take a few minutes; pause occasionally to scrape down the sides if needed.
  3. Melt the chocolate: Melt the dark chocolate over a double boiler or in the microwave (in short bursts to avoid burning it). Let it cool slightly.
  4. Combine ingredients: Add the melted chocolate, cocoa powder, honey/maple syrup, plant-based milk, vanilla extract, and salt to the nut butter in the food processor. Blend until everything is well combined and the texture is smooth and creamy.
  5. Storage: Pour the mixture into a clean jar and store it in the refrigerator. It should stay fresh for 2-3 weeks.
