Healthy Mexican Quinoa Dish
- 1 cup quinoa
- 1 tbsp olive oil
- 2 garlic cloves
- 1 chili (or jalapeño)
- 1 can diced tomatoes
- 1 cup water
- 1 tsp cumin
- Salt + pepper
- 1 can kidney beans
- 1 can corn
- 1 avocado
- Juice of one lime
- 2 tbsp chopped cilantro.
- Finely chop the garlic and chili, then sauté lightly in the olive oil.
- Add the quinoa, tomatoes, water, and spices. Simmer for 20 minutes.
- Rinse the kidney beans and add them along with the corn (discard the liquid from the can).
- Dice the avocado and mix it into the dish.
