Healthy Mexican Quinoa Dish

  • 1 cup quinoa
  • 1 tbsp olive oil
  • 2 garlic cloves
  • 1 chili (or jalapeño)
  • 1 can diced tomatoes
  • 1 cup water
  • 1 tsp cumin
  • Salt + pepper
  • 1 can kidney beans
  • 1 can corn
  • 1 avocado
  • Juice of one lime
  • 2 tbsp chopped cilantro.
