The Best Potato Salad
Ingredients:
- 1 kg potatoes
- 2 apples, diced
- 1 small red onion, finely chopped
- 4 pickles, chopped
- 100 ml sour cream
- 100 ml mayonnaise
- 50–100 ml whipped cream
- 1 tsp Dijon mustard
- 1 tbsp vinegar or white wine vinegar
- Salt and pepper to taste
- 1 handful fresh dill, chopped
Method:
Boil the potatoes with the skin on until tender. Let them cool, peel, and cut into pieces.
In a large bowl, combine the potatoes with apples, red onion, and pickles.
In a small bowl, mix sour cream, mayonnaise, whipped cream, mustard, and vinegar. Season with salt and pepper to taste.
Pour the dressing over the salad and gently mix everything together.
Sprinkle with fresh dill and let it sit in the fridge for at least an hour before serving.
