Fresh Fig Salad with Walnuts and Goat Cheese
(Serves 4-6)
Ingredients:
- 2 cups fresh figs, quartered
- 100 g goat cheese (e.g., mild chèvre), crumbled
- 50 g walnuts, lightly toasted in a pan
- 100 g fresh salad greens (e.g., arugula or mixed greens)
- 2 tbsp honey
- 2 tbsp balsamic glaze (or balsamic vinegar)
- 2 tbsp good-quality olive oil
- Salt and freshly ground black pepper to taste
Method:
- Toast the walnuts in a dry pan over medium heat for 2-3 minutes until fragrant. Set aside to cool.
- Rinse the salad greens and spread them out on a large plate or platter.
- Arrange the figs beautifully on top of the greens, then sprinkle over the toasted walnuts and crumbled goat cheese.
- Mix the honey, balsamic glaze, and olive oil. Season with salt and pepper to taste.
- Drizzle the dressing over the salad just before serving.
I recommend preparing everything in advance but adding the dressing at the last minute for the best texture and flavor. Enjoy!
