Chicken in Mango Sauce
Ingredients:
- 4 chicken pieces or breasts
- 2-3 tbsp olive oil
- 200 ml cream
- 4 tbsp mango chutney
- Juice of half a lemon
- Salt and pepper
Instructions:
- Grease an ovenproof dish with olive oil. Place the chicken pieces or breasts in the dish and squeeze the lemon juice over them. Season with salt and pepper.
- Mix the cream and mango chutney together and pour over the chicken.
- Bake at 175°C (350°F) for 30-35 minutes or until the chicken is fully cooked through.
- Serve with quinoa or rice, along with vegetables or a salad.
Tip for variety: Chop up some vegetables (whatever you have on hand), sauté them in a pan, and mix them into the cream and mango chutney for an even tastier dish! 😊
