Chicken in Mango Sauce

Ingredients:

  • 4 chicken pieces or breasts
  • 2-3 tbsp olive oil
  • 200 ml cream
  • 4 tbsp mango chutney
  • Juice of half a lemon
  • Salt and pepper

Instructions:

  1. Grease an ovenproof dish with olive oil. Place the chicken pieces or breasts in the dish and squeeze the lemon juice over them. Season with salt and pepper.
  2. Mix the cream and mango chutney together and pour over the chicken.
  3. Bake at 175°C (350°F) for 30-35 minutes or until the chicken is fully cooked through.
  4. Serve with quinoa or rice, along with vegetables or a salad.

Tip for variety: Chop up some vegetables (whatever you have on hand), sauté them in a pan, and mix them into the cream and mango chutney for an even tastier dish! 😊
