Blueberry Cake – Smilingly Healthy Goodness
Crust
150 g fresh dates (about ½ cup)
130 g almonds (about 1 cup)
2–3 tbsp honey
½ tsp salt
Filling
1½ dl desiccated coconut
1½ dl cashew nuts
2–3 dl fresh blueberries
1–2 tbsp honey
2–3 tbsp liquid coconut oil
2 tsp lemon juice
Instructions
Crust:
Grind the almonds in a food processor. Add the dates and honey and process until combined. Place the ring of a springform pan on a serving plate and press the mixture firmly into the base. Chill.
Filling:
Blend all the filling ingredients together in a food processor until smooth. Pour the mixture over the crust and refrigerate for several hours. Run a knife around the edge of the springform ring and remove it carefully. Decorate with fresh blueberries and desiccated coconut.
