
Blueberry Chia Pudding
This blueberry chia pudding is wonderfully easy to make and takes only a few minutes to prepare. The texture is silky smooth, and the pudding melts gently in your mouth – pure comfort in a glass.
Three tablespoons of chia seeds were blended with the other ingredients in the food processor, while the remaining two tablespoons were stirred in at the end to give the pudding a lovely balance of creaminess and subtle texture.

Blueberry Chia Pudding
Ingredients
½ can coconut milk (about 200 ml)
1 cup (soy) yogurt
3 avocados
1 cup frozen blueberries
5 tbsp chia seeds
½ tsp salt
1 tsp vanilla extract
1 tsp peppermint extract
1 tbsp honey
Method
Place all ingredients except 2 tablespoons of the chia seeds into a food processor and blend until completely smooth and creamy. Stir in the remaining chia seeds by hand.
Pour the mixture into a bowl or individual glasses and chill in the refrigerator for about 30–40 minutes before serving.
