Juicy Coconut Cake with an orange taste
My sister Vilborg baked in a juicy coconut cake with an orange taste. A juicy cake that can be well recommended. This cake can be both an everyday cake, a simple base with icing (1 dl icing sugar, 1 teaspoon cocoa, 2 tablespoons orange juice) or a Sunday version with two layers and e.g. cream cheese between and on top.
Juicy coconut cake with an orange taste
100 g butter
1 cup sugar
grated rind of 1 orange
3 tablespoons orange juice
2 l/2 dl coconut
¾ dl flour
1 teaspoon baking powder
Oven set at 170 ° C.
Melt butter. Beat eggs and sugar lightly and lightly. Rinse the orange well and brush before ripping the rind. Mix together coconut, flour and baking powder and add to the egg mix, together with grated peel, orange juice and melted butter. Stir well and place in a round shape about 24 cm. It is best to use shapes with a loose edge.
The cake is baked in the lower part (next rim below the middle) of the oven for approx. 30 minutes.
250-300 g cream cheese
about 400 g icing sugar
juice of one lemon
Start by stirring the cream cheese softly, then add the icing sugar in small portions, the lemon juice and the drops are added at the end. Taste. Decorate as you wish.
