Yellow bean soup

 

Ingredients:

  • 500 g yellow beans
  • 1 dl leeks
  • 5-6 carrots
  • 1 swede (rutabaga)
  • 1/2 chili
  • 1/2 teaspoon thyme
  • 3-4 slices of bacon
  • About 2 liters water
  • Salt and pepper, to taste

Instructions:

  1. Rinse the beans thoroughly and place them in a large saucepan.
  2. Chop the leeks, carrots, swede, and chili. Add them to the pot along with the bacon slices and thyme.
  3. Pour in enough water to cover the ingredients well. Bring to a boil, skimming off any foam that rises to the surface.
  4. Once boiling, turn off the heat, and cover the pot with aprons or towels to retain the heat. Let it stand for 2-3 hours.
  5. After the resting time, check the seasoning. Add salt, pepper, and more water if needed.
