
Yellow bean soup
500 g yellow beans
1 dl leeks
5-6 carrots
1 swede
1/2 chili
1/2 teaspoon thyme
3-4 slices of bacon
about 2 l. water
salt and pepper
Rinse the beans and place in a saucepan. Cut down the leeks, carrots, swede and chilli and add with the bacon and thyme. Pour water so that it flows well. Bring the boiling up, toss the sorrel (foam) off. Turn off and put aprons and towels over the pot. Leave to stand for 2-3 hours. Add salt and pepper if needed and add water if needed.
