Shrimp and Bell Pepper Salad
This shrimp salad is a delicious and refreshing dish that’s perfect for potlucks and gatherings. Here’s a recipe for a cold shrimp salad with, bread, bell peppers and a creamy mayo dressing.
Shrimp and Bell Pepper Salad
Ingredients:
1 lb cooked and chilled shrimp, peeled and deveined
10 sliced white bread, chop into small pieces.
1 cup mayonnaise
1/2 cup sour cream
2 tablespoons lemon juice
1 tablespoon Dijon mustard
Salt and pepper to taste
2 tablespoon sweet mustard
1 red bell pepper, chopped
1 yellow bell pepper, chopped
Fresh parsley or chives, chopped (optional)
In a large bowl, combine the chilled shrimp, bread, mayonnaise, sour cream, lemon juice, Dijon mustard, salt, and pepper.
Place in a bowl, add sweet mustard and sprinkle with bell peppers.
