LEMON TART

LEMON TART

1 1/2 cups all-purpose flour
1/2 cup unsalted butter, cold and cubed
1/4 cup granulated sugar
1/4 tsp salt
1 large egg yolk
2-3 tbsp ice water

1/2 cup freshly squeezed lemon juice
1/2 cup granulated sugar
3 large eggs
1/4 cup unsalted butter, melted and cooled
1 tbsp lemon zest
Whipped cream and fresh berries, for serving

1. In a large mixing bowl, combine the flour, sugar, and salt. Cut in the cold butter until the
mixture resembles coarse crumbs.
2. Add the egg yolk and 2 tablespoons of ice water to the mixture, and stir until the dough
comes together. Add an additional tablespoon of ice water if needed.
3. Press the dough into the bottom and up the sides of a 9-inch tart pan. Prick the bottom
of the dough with a fork and chill for at least 30 minutes.
4. Preheat the oven to 375°F (190°C). Line the chilled tart shell with parchment paper and
fill with pie weights or dried beans. Bake for 10-12 minutes, then remove the weights
and parchment paper and bake for an additional 5-7 minutes, or until lightly golden
brown.
5. In a medium mixing bowl, whisk together the lemon juice, sugar, eggs, melted butter,
and lemon zest until smooth.
6. Pour the lemon filling into the pre-baked tart shell and bake for 20-25 minutes, or until
the filling is set and the edges are lightly golden brown.
7. Let the tart cool to room temperature, then serve with whipped cream and fresh
berries, if desired.
