Chili sin Carne – Vegetable Chili Stew
Pumpkin is incredibly delicious and can be used in various vegetable dishes. There is also the famous pie called pumpkin pie. I had some cooked barley and added it to the stew right before serving.
Chili sin Carne – Vegetable Chili Stew
- 2 tbsp good-quality oil
- 2 onions, chopped
- 2-3 garlic cloves, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 sweet potato (about 500g), cut into bite-sized pieces
- 1 pumpkin, cut into bite-sized pieces
- 1/2 – 1 green chili, chopped
- 1-2 tbsp coriander, chopped
- 1 tbsp cumin
- 1 can chopped tomatoes
- 2 tbsp tomato paste
- 3 dl water
- Salt and pepper to taste
- 1 can kidney beans
Instructions:
- Lightly sauté the onions in the oil and add the garlic.
- Cut the sweet potato and pumpkin into bite-sized pieces and add them to the pot.
- Add all the spices, along with the tomatoes, tomato paste, water, salt, and pepper, and let simmer for about 25 minutes.
- Drain most of the liquid from the kidney beans and add them to the pot.
- Continue cooking for about 10 minutes.
Serve with brown rice.
