Kale Salad with Apples and Barley

Kale Salad with Apples and Barley
- 1/2 cup barley
- 4 cups chopped kale
- 2 red apples, roughly chopped
- 1 cup walnuts, roughly chopped
- 1/2 cup cranberries
- 1/2 cup feta cheese
Dressing
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 tbsp honey
- 1 tbsp Dijon mustard
- 2 tbsp water
- Salt to taste
Instructions:
- Cook the barley according to the package instructions. Let it cool.
- In a bowl, combine the barley, kale, apples, walnuts, and cranberries.
Dressing:
- Put all the dressing ingredients in a glass jar and shake well to combine.
- Pour the dressing over the salad.
- Add the feta cheese on top or serve it on the side when serving the salad.
