Cauliflower is an exceptionally healthy, tasty, and nutrient-rich vegetable. It is high in vitamin C, vitamin K, and folate, and also contains antioxidants and fiber. Plus, cauliflower is low in calories, for those of you who count them 🙂

In about 100 grams of cauliflower, there are approximately 1.9 grams of protein. While cauliflower isn’t very high in protein compared to foods like meat, fish, or beans, it’s a great part of a protein-rich and healthy diet, especially for those following a plant-based diet.

Mashed Cauliflower

  • 1 fairly large head of cauliflower (about 700-800 g)
  • 2 tbsp butter (or olive oil)
  • 2-3 tbsp cream or cream cheese
  • Salt and pepper
  • 1-2 garlic cloves, minced
  • 1 tbsp grated Parmesan cheese
  • 1/3 tsp nutmeg

Instructions:

  1. Remove the stems and leaves from the cauliflower and cut it into pieces.
  2. Place the cauliflower pieces in a pot with water and a pinch of salt. Bring to a boil, then reduce the heat and simmer for about 10-15 minutes, or until the cauliflower is soft. It should be easy to pierce with a fork.
  3. Drain the water from the cauliflower and let it sit in the strainer for a few minutes to remove as much water as possible.
  4. Put the cauliflower, butter, cream, garlic, nutmeg, Parmesan, salt, and pepper into a food processor or use an immersion blender and puree until smooth. Adjust seasoning to taste.
  5. Serve the mashed cauliflower hot, for example with meat, fish, or vegetables.

Tips:

  • For a smoother texture, you can add more cream or cream cheese.
  • For extra flavor, consider adding chives, rosemary, or lemon zest.
