Apricot Spice Paste
Apricot spice paste pairs well with many dishes, such as bean, vegetable, and meat dishes. It can also be used as a spread on (toasted) bread and with cheeses. When I first tasted apricot paste, it felt like the equivalent of a good sauce.
Apricot Spice Paste
- 3-4 dl dried apricots
- 1 tsp cumin
- 1 tsp dried coriander
- 1 tsp cardamom powder
- 1 tbsp fresh ginger, chopped
- Water
Place all the ingredients in a pot, add just enough water to cover, and simmer for about 15 minutes. Transfer to a food processor and blend into a smooth paste. Serve warm or store in a glass jar with a lid in the refrigerator.
