Carrot Cake – Healthy and Delicious
Ingredients:
- 2 eggs
- 100 g melted butter
- 1 dl raw sugar
- 2 dl grated apples
- 4 dl grated carrots
- 1 dl almond flour
- 1 dl coconut flour
- 1 dl wheat flour
- 1 tsp ginger powder
- ½ tsp cinnamon
- 1 tsp allspice
- 1 tsp cloves
- 1 tsp baking powder
- Juice of one lime
Buttercream:
- 150 g powdered sugar
- 150 g cream cheese
- 100 g softened butter
- 1/3 tsp salt
- Grated zest of one lime
The Cake:
- Beat the eggs and sugar together well.
- Add the butter, carrots, apples, flour, wheat, spices, baking powder, and lime juice, and mix together.
- Grease a 22 cm round cake tin, pour in the batter, and smooth it out.
- Bake at 175°C for 35 minutes.
Frosting:
- Mix everything well and spread over the cake once it has cooled.
- Serve with lightly whipped cream and happiness.
