Broccoli and Apple Salad

2 cups broccoli florets
1 large apple, chopped
1/2 cup pecans, roughly chopped
1/4 red onion, thinly sliced
1/2 cup grated carrot

2 tablespoons mayonnaise
1 tablespoon honey
1 tablespoon Dijon mustard
2 tablespoons olive oil
Salt and black pepper to taste.

Start by blanching the broccoli florets in boiling water for 2-3 minutes, then transfer to a bowl of ice water to stop the cooking process. Drain and set aside.
