Avocado Raw Cake
Crust:
- 1 ½ cups shredded coconut
- 1 ½ cups almonds
- ½ tsp salt
- 350 g dates, soaked for 10 minutes
- A pinch of cayenne pepper
Filling:
- 2 large avocados
- ½ cup honey (or slightly less)
- ⅓ cup lime juice (or slightly more)
- 1 dl melted coconut oil
For decoration: Fresh fruit like kiwi, blueberries, or any other of your choice.
Instructions:
Crust:
Grind the almonds in a food processor. Add the shredded coconut, soaked dates (drain the water), salt, and cayenne pepper. Process until the mixture comes together. Press the dough into a springform pan placed on a serving plate. Chill in the refrigerator.
Filling:
Blend all the filling ingredients in a food processor until the mixture is silky smooth. Pour it over the crust and chill for a few hours or overnight.
Decorate with fresh fruit or anything beautiful of your choice. Enjoy!
