Tuna and Kidney Bean Salad – Simple, Healthy, and Delicious!

Sometimes simplicity is best, and this salad is a perfect example of a quick and satisfying meal that’s packed with flavor. The tuna and kidney beans provide excellent protein, while the mustard and vinegar dressing adds a fresh and tangy kick.

Ingredients:

• 1 cucumber
• 1 can tuna
• 1 can kidney beans
• 1 dl chopped spring onions
• 2 tsp apple cider vinegar
• 1 tsp strong mustard
• 2 tbsp olive oil
• Salt and black pepper

Method:

  1. Drain and rinse the kidney beans well.
  2. Chop the cucumber into chunky pieces and place in a bowl.
  3. Drain the tuna and roughly break it apart into the bowl with the cucumber.
  4. Add the kidney beans and spring onions.
  5. Combine the vinegar, mustard, and olive oil in a jar, seal tightly, and shake well. Pour over the salad and mix thoroughly.
  6. Season with salt and pepper to taste.

Tip: Serve this salad on its own, as a tasty side dish with fish, or piled onto toasted bread for a delicious open-faced sandwich.
