
Tuna and Kidney Bean Salad – Simple, Healthy, and Delicious!
Sometimes simplicity is best, and this salad is a perfect example of a quick and satisfying meal that’s packed with flavor. The tuna and kidney beans provide excellent protein, while the mustard and vinegar dressing adds a fresh and tangy kick.
Ingredients:
• 1 cucumber
• 1 can tuna
• 1 can kidney beans
• 1 dl chopped spring onions
• 2 tsp apple cider vinegar
• 1 tsp strong mustard
• 2 tbsp olive oil
• Salt and black pepper
Method:
- Drain and rinse the kidney beans well.
- Chop the cucumber into chunky pieces and place in a bowl.
- Drain the tuna and roughly break it apart into the bowl with the cucumber.
- Add the kidney beans and spring onions.
- Combine the vinegar, mustard, and olive oil in a jar, seal tightly, and shake well. Pour over the salad and mix thoroughly.
- Season with salt and pepper to taste.
