
Chocolate Date Cake with Dark Chocolate Glaze

Chocolate Date Cake with Dark Chocolate Glaze
Ingredients
Cake
3 tbsp brown sugar
2 tbsp neutral oil (such as sunflower or light olive oil)
1 tsp molasses (or dark syrup)
1/4 cup soy milk
1/2 tsp apple cider vinegar
1/2 cup date purée (see method below)
1/2 cup whole wheat flour
1 tsp baking powder
1/4 tsp baking soda
Chocolate Glaze
150 g (5 oz) good-quality dark chocolate
2–3 tbsp neutral oil
Instructions
1. Prepare the Date Purée
Simmer 10–12 pitted dates with about 3 tablespoons of water for 3–5 minutes, until soft.
Allow to cool slightly.
Blend into a smooth purée using a hand blender or food processor.
Measure 1/2 cup for the recipe.
2. Make the Cake
Preheat the oven to 180°C (350°F).
Stir together the soy milk and apple cider vinegar. Let sit for 1–2 minutes to create a plant-based “buttermilk.”
In a bowl, combine the flour, baking powder, and baking soda.
In a separate bowl, whisk together the brown sugar, oil, molasses, date purée, and soy milk mixture.
Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
Grease a 20–22 cm (8–9 inch) cake pan.
Pour the batter into the pan and smooth the top.
Bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean.
Allow the cake to cool completely before glazing.
3. Chocolate Glaze
Melt the dark chocolate and oil gently over a bain-marie (double boiler).
Stir until smooth and glossy.
Let cool slightly until thickened but still pourable.
Spread evenly over the cooled cake.
Decorate with fresh berries, sliced fruit, or a sprinkle of flaky sea salt if desired.
