Cheese Rolls (Savory Cheese Crescents)
Ingredients
100 g grated cheese (about 26% fat)
250 g flour or whole wheat flour
2 tsp baking powder
1 tsp sugar
75 g butter
2 dl cultured milk or buttermilk
1 egg, for brushing
extra grated cheese and/or sesame seeds for topping
Method
Mix the flour, sugar and baking powder in a bowl.
Rub the butter into the dry ingredients until the mixture resembles coarse crumbs.
Stir in the grated cheese and add the cultured milk.
Knead the dough until smooth and well combined.
Roll the dough out into two round discs. Cut each disc into eight wedges.
Roll each wedge up from the wide end to form a crescent shape and place on a greased baking tray or a tray lined with baking paper.
Tuck the pointed end underneath to help the rolls keep their shape.
Brush with beaten egg and sprinkle with grated cheese and/or sesame seeds.
Bake at 200°C (390°F) for 15–20 minutes, or until golden and beautifully risen.
