Energising Spiced Tea – Chai Tea

This warming and aromatic spiced tea is wonderfully energising and comforting. Perfect when you feel a bit run down or sense a cold coming on, and especially lovely during the darker months of the year. A deeply soothing, gently stimulating drink that warms you from the inside out.

Energising Spiced Tea – Chai Tea

Ingredients
5–6 cloves
6–8 green cardamom pods
½–1 cinnamon stick
4–6 black peppercorns
4–6 slices of fresh ginger
a pinch of nutmeg
1–2 tsp loose-leaf black tea (for example Earl Grey)
1 tsp honey, or to taste
1 cup water
1 cup rice milk

Method

  1. Lightly crush the cardamom pods using a mortar and pestle.

  2. Place them in a saucepan with the remaining spices and the water.

  3. Bring to a boil, cover, and simmer for about 1 minute.

  4. Add the black tea and let it simmer briefly.

  5. Pour in the rice milk and allow the mixture to just come to a gentle boil again.

  6. Strain into a teapot or cups and sweeten with honey.
