
Savoury Puff Pastry Pinwheels with Leek, Ham and Blue Cheese
These savoury puff pastry pinwheels are crisp on the outside, soft and flavourful on the inside, and irresistibly moreish. They are perfect for parties, brunch tables, afternoon coffee or as an easy make-ahead snack when entertaining. Simple to prepare yet impressive on the plate, they tend to disappear almost as soon as they are served.

Savoury Puff Pastry Pinwheels (about 40 pieces)
2 packs puff pastry (400 g total)
75 g leek, finely chopped
250 g ham, finely diced
100 g blue cheese, grated or crumbled
2 egg yolks
Place the puff pastry sheets next to each other to form a long rectangle. Slightly overlap the edges, moisten them lightly and press together, then roll out gently. It helps to roll the pastry between two sheets of baking paper. Be careful not to roll the dough too thin.
Scatter the leek, ham and blue cheese evenly over the pastry. Roll it up tightly into a log and slice into pieces about 3 cm thick. Arrange the pinwheels on a baking tray, gently press each one down and brush with egg yolk.
Bake in a preheated fan oven at 180°C (350°F) for about 15 minutes, or until golden and puffed.
Serve warm or at room temperature, ideally with redcurrant jelly or cranberry relish — highly recommended.
