Beta´s carrotcake. I’ve tried many carrot cakes, this is this truly is the best. Beta Reynis has developed and refined this wonderful carrot cake – healthy and tasty.
Beta´s carrotcake
2 eggs
100 g melted butter
1 dl raw sugar
2 dl grated apple
4 dl grated carrots
1 dl almond flour
1 dl coconut flour
1 dl flour
1 teaspoon ginger powder
½ teaspoon cinnamon
1 teaspoon allspices
1 teaspoon cloves
1 teaspoon baking powder
juice from one lime
Cream cheese-frosting:
150 g icing sugar,
150 g cream cheese,
100 g soft butter
1/3 teaspoon salt
grated rind of one lime.
Cake: Stir together eggs, sugar and butter. Add carrots, apples, flour, flour, spices and baking powder, stirring. Grease a round form 22 cm and pour the dough and smooth. Bake at 175 ° C for 35 minutes.
