
Yellow bean soup
Ingredients:

- 500 g yellow beans
 - 1 dl leeks
 - 5-6 carrots
 - 1 swede (rutabaga)
 - 1/2 chili
 - 1/2 teaspoon thyme
 - 3-4 slices of bacon
 - About 2 liters water
 - Salt and pepper, to taste
 
Instructions:
- Rinse the beans thoroughly and place them in a large saucepan.
 - Chop the leeks, carrots, swede, and chili. Add them to the pot along with the bacon slices and thyme.
 - Pour in enough water to cover the ingredients well. Bring to a boil, skimming off any foam that rises to the surface.
 - Once boiling, turn off the heat, and cover the pot with aprons or towels to retain the heat. Let it stand for 2-3 hours.
 - After the resting time, check the seasoning. Add salt, pepper, and more water if needed.
