Rosemary and Almond Crackers

  • 2 1/2 cups flour
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 cups (soy) milk
  • 1 tbsp honey
  • 1 tbsp brown sugar
  • 2/3 cup raisins
  • 1 dl (about 1/2 cup) almonds, coarsely chopped
  • 1 dl (about 1/2 cup) pumpkin seeds
  • 1 dl (about 1/2 cup) sesame seeds
  • 1 dl (about 1/2 cup) flaxseeds
  • 1 tsp vinegar
  • 2 tbsp rosemary
  1. Mix all the ingredients together and pour the batter into a loaf pan. Bake at 175°C (350°F) for about 25 minutes.
  2. Remove from the pan and allow to cool.
  3. Slice the loaf into thin slices, arrange them on baking paper, and bake at 135°C (275°F) for 20–30 minutes, or until the slices are golden. You may need to flip them halfway through.

Serve with cheese, hummus, almond butter, or other tasty toppings.
