Date Cake with Warm Caramel Sauce
The Cake:
- 235 g dates (2 cups)
- 1 tsp baking soda
- 120 g soft butter
- 5 tbsp sugar
- 2 eggs
- 3 dl (1¼ cups) flour
- ½ tsp salt
- ½ tsp vanilla extract
- 1⅓ tsp baking powder
Place the dates in a saucepan and cover them with water. Bring to a boil, then turn off the heat and let the date mixture sit for 3 minutes. Stir in the baking soda.
Cream the butter and sugar together until light and fluffy, then add the eggs one at a time. Mix in the flour, salt, and vanilla extract. Gently fold in the baking powder along with ¼ cup of the date mixture. Finally, add the remaining date mixture and stir until combined.
Grease a 24 cm (9½ inch) springform pan (about 8 cm high) with butter and pour in the batter. Preheat the oven to 180°C (350°F) and bake for 30–40 minutes, or until the center is set.
Turn the cake onto a serving plate and serve warm or cold with the sauce and lightly whipped cream. You can also garnish with dates, strawberries, or walnuts.
Caramel Sauce:
- 120 g butter
- 115 g brown sugar (2 dl / ¾ cup)
- ½ tsp vanilla extract
- ¼ cup cream
- ⅓ tsp salt
Combine all ingredients in a saucepan and simmer for a few minutes, until the sauce has thickened.
