
Licorice Pavlovas
These delightful Pavlovas combine the sweet crunch of meringue with a rich, creamy licorice sauce. Perfect for special occasions or as a unique dessert to impress your guests, these treats are both elegant and easy to make.

Pavlovas:
- 4 egg whites
- 200 g sugar
- 400 g cream
Licorice Sauce:
- 15 licorice caramels
- 5 tbsp cream
Method:
Whip the egg whites and sugar until stiff peaks form. Transfer the mixture to a large piping bag and snip off the tip. Pipe generous, plump peaks onto a baking sheet lined with parchment paper. Use a teaspoon to gently press down the center of each peak, creating a slight hollow.
Bake at 90°C (194°F) for 45 minutes. Turn off the oven and allow the meringues to cool completely before removing them. For best results, bake them in the evening and leave them in the oven overnight.
Melt the licorice caramels with the cream, stirring until smooth. Drizzle the licorice sauce irregularly over each Pavlova before serving.
Tips:
- For added texture, sprinkle crushed licorice candy or chocolate shavings over the Pavlovas before serving.
- If you prefer a softer meringue, reduce the baking time slightly.
- Store leftover Pavlovas in an airtight container to maintain their crisp texture.
