In the good weather last summer, I worked at a summer hotel. Banana bread was regularly baked, which I linked directly to my stay in the countryside. More often than not, we stuffed ourselves with freshly baked bread with butter that melted on the slice.
1 cup butter
2/3 cup brown sugar
4-5 bananas, well ripened and mashed with a fork
1 1/2 cup spelt flour
1 cup coarse oatmeal
1 1/2 cup pecans, coarsely chopped
1 tablespoon coconut flakes
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon vanilla
Whisk together butter and brown sugar. Mix eggs and mashed bananas with the butter and sugar mixture. Mix dry ingredients and add them to the egg, butter, sugar and banana mixture. Finally, add pecans and coconut flakes to the dough.
Put in two greased loaves (small) that have been greased. Bake at 175 ° C for about 55 minutes. Serve with butter and cheese.
