Beetroot Hummus

Beetroot Hummus
Ingredients:
- 2 medium-sized beetroots
- 1 can chickpeas, drained (reserve the liquid)
- ½ teaspoon salt
- 3 tablespoons tahini
- 2 tablespoons lemon juice
- A little water (as needed)
- 2 tablespoons honey
- 2 garlic cloves, roughly chopped
Instructions:
- Roughly chop the beetroots and boil them for about an hour, or until they are fully cooked. Let them cool.
- Place the cooled beetroots in a food processor. Add the drained chickpeas, reserving the liquid.
- Add the salt, tahini, lemon juice, water (as needed), honey, and chopped garlic.
- Blend until smooth, adding the reserved chickpea liquid gradually to achieve the desired consistency.
